The Knife: Sharpen Your Skills

Are you curious about the cutting board? This is the class for you. We’ll cover proper knife care including: maintenance, honing, and understanding every aspect of how to sharpen your own blade using a water stone. Then we'll simplify all of the slicing and dicing that might otherwise scare you away from a recipe. Bring your own knife and anything you use to maintain it. Expect to learn everything you ever wanted to know about your own knife, but were afraid to ask.

Once your knife is sharp, we’ll practice all of the classic cuts and some not-so-classic cuts. Then we'll turn all of your efforts into tasty results!

Students must bring their own knife.

Hailing from the Midwest, Joshua Stokes' affection for food was cultivated in a cornfield, not the kitchen. No frills food was his upbringing. He always had enjoyed eating, and even started cooking at a pizza joint in high school. However, food didn't make itself known to him as a vocation until a college spring break trip to New Orleans saw his booze budget being funneled into restaurants instead. He was hooked. In 1999 Joshua took a hiatus from the pursuit of a sculpture degree to try his hand as a professional chef. New York opened many doors around the world. By 2001 Joshua had made his way to Italy and was working in some of its greatest restaurants. Returning to the New York restaurant scene, Joshua made his way through some of the city’s great kitchens, before making the transition to private service. Again, traveling the globe, Joshua acted as private chef to some of the biggest names in the financial and entertainment industries, picking up worldly tricks throughout his travels. By the end of 2008, Joshua was on the hunt for something more meaningful to do with his trade. Thus was born Grill-A-Chef, an organization built around helping people cook and eat better.

Charlie Mirisola had a knife in his hand as soon as he was able to see over the counter top. Charlie cut his teeth professionally at Goods Food in Williamsburg and hasn't looked back. He has consulted for several NYC kitchens and within the private sector. As co-founder of Brooklynauts.com he has made a loud name for himself in the competitive cooking world of Brooklyn.
